Why did you choose to use peanut oil?

I used peanut oil because it is traditional in Thailand... one could also use a neutral oil.

How is osso bucco Thai?

Osso bucco is simply the name for the cross cut leg meat (in the case of beef, usually the shanks) and has exposed marrow on either side. I suppose bone marrow is not a very Thai ingredient but other wise it's just meat.
